Further adventures in alchemy and wild yeast. When I brewed my christmas beer two weeks ago, I decided to split the batch, planning on using some second generation S-04, and comparing it against
Gervin Ale Yeast
I thought I had some S-04 in the fridge, but it turned out to still be in a fermenter that wasn't really quite ready yet. However, I found a (very) old pack of Wyeast 1028 in the back of the fridge....
- Yeast keeps well right?
I wasn't really very confident in this, I gave it 16 hours or so in a nice warm place, and it hadn't really swollen, but what the hell, I tossed it in, and reclosed the fermenter. I planned on giving it a few days, and then, when the S-04 was ready, if it hadn't taken off, I'd pitch some S-04 on top.
That was today, and though it hasn't really taken off, it has gotten started. It's not alone though

Looks like the house has decided what to brew this time, and included some mould for good measure. I'm just going to let it run it's course again, see what comes out on the far side
The S-04 has been bottled and set aside for another test split batch later on.
