Hi Raggi
I notice you posted 3 days ago so I hope you have already solve your problems. In any case here are my comments.
Regarding to your first problem, maybe you are facing stuck fermentation. To find the best way to restart the fermentation and drive it all the way to the end more information is required:
1. You said its stuck at SG=1.065 but, what was your hydrometer reading before fermentation SG=??.
2. For how long did you have visual signs of active fermentation (bubbles through airlock, etc) ?
3. Apart from oxygen, did you add right amount of yeast nutrients to the must (DAP, etc)?
4. What kind of yeast strength you are using?
The answer to all those questions will tell you how much alcohol you have already in the must, so you should prepare the yeast starter considering that you will pitch it into a medium containing already alcohol. I think its better to prepare the yeast for that. On the other hand if your must is pour in nutrients the fermentation will never start again either get to the final point where you wan it to be. I believe Lalvin 1118 its a good strength, you should consider it for treating stuck fermentation.
I apologize for no having comments on your second problem. My Icelandic is pour so I didn't understand well.
Good luck.
Mano.

1 og 2. SG var 1082 þegar ég byrjaði. Lítil virkni fyrstu fimm dagana en eftir að ég tók hratið úr þá hætti virknin.
3. Ég setti einn pakka af vínnæringu út í 25 lítra.
Hi Raggi
If you had poor fermentation activity the 5 first days, after that no more activity and gravity have been the same (SG=1.065) since that; Then It’s clear that fermentation is stuck.
There are several causes for stuck fermentation. Two main causes are:
1. Insufficient nutrition for the yeast to thrive. (if this happens: lack of assimilable nitrogen, B-vitamins, etc, then the successive generation of yeast will weaken and stop doing their job)
You said you are making wine from berries. If your berries were other than grapes I would use 5 grams of yeast nutrients per 3.8 liters of juice. (I’ve been using that rate and no problems at all. Yeast nutrients are mainly DAP, so if I’m dealing with berries like bláber or áðalbláber then I use yeast energizer as well, to provide some B-vitamins)
You said you add one packet (einn pakka) of nutrients. I have no idea how much nutrients is in your one packet, do you know? For example, one packet of yeast nutrients from Áman, has 10 g of nutrients…
2. Sudden drop in temperature. (you know, each yeast has its own temperature range in which they work best. A quick chill will cause yeast to clump up and drop to the bottom, giving up on their job. )
The yeast you are using, Vintners Harvest Yeast-CR51, has optimal temperature between 22 to 30oC… think about it.
Regarding to the alcohol already produced from 1.082 to 1.065 its not even 3 %. Anyway I would recommend making a starter adding to it -step by step- some of your must (berry juice you are trying to ferment) and pitch it into the fermenter, only when it is very active.
I hope it helps
Good luck and keep us informed.
