Sítrónuvín - Skeeter Pee

Fyrir uþb ári keypti ég brúsa af sítrónusafa í Kosti með það í huga að gera batch af skeeter pee. Eitthvað ílengdist þessi brúsi hjá mér, en loksins smellti ég í 11 lítra carboy af þessu hnossgæti.

Það sem þarf:
  • Einn brúsi af sítrónusafa (48oz)
  • 1.7kg sykur
  • US05 ger
  • Vín tannin
  • Gernæring
  • Gerkraftur
Fyrst á dagskrá er að gera invert sykur, en það gerir maður með því að setja sykurinn í pott, 230ml af sítrónusafa úr brúsanum og 1 lítra af vatni. Það er hitað upp að suðumarki, og haldið þar í 20-30mín.
Það er þægilegt að gera þetta í of stórum potti, til að hafa nóg pláss fyrir kalt vatn eftir suðuna.

Á meðan á þessu stendur er sterkur leikur að sótthreinsa gerjunarílát og áhöld sem verða notuð, ásamt því að bleyta upp í gerinu.

Því næst er potturinn fylltur af vatni (aðallega til að kæla þetta niður), og öllu hellt í gerjunarílátið. Ef það vantar vatn uppá þá er gott að bæta því við hérna. Því næst er gott að mæla hitann, til að vera viss um að gumsið sé komið undir 25°C til að gerið geti farið í. Sykurmæling er svo tekin (1.070 er ágætt að miða við) og gerinu, gernæringu, gerkrafti og tannin bætt í. Hugsanlega er gott að sjóða gernæringuna, kraftinn og tannín, en ég gerði það ekki.

Svo er beðið í 20-30 daga áður en sett er á flöskur og eitthvað fleira er gert. En ég er víst ekki alveg kominn þangað :)

Ég hef ekki hugmynd um hvernig þetta bragðast (sítrónubragð kannski?), en þetta er allavega skemmtileg tilraun sem er hægt að gera með lágmarks tilkostnaði.

það er talað um að gerjun sé erfið vegna þess hve súr lausnin sé, veit einhver hvort það myndi hafa áhrif á bragð að nota basa eins og t.d. matarsóda til að minnka sýru fyrir gerjun ?

Það verður gaman að sjá hvernig þetta kemur út!

Ég ætlaði að setja í einn svona í sumar en það varð ekkert úr því svo því var slegið á frest til næsta sumars.
Kem svo í skúrinn og fæ top tips varðandi skeeter-pee reynsluna í næstu kornkaupum.

Ég held að þetta verði tilvalið að hafa á krana næsta sumar :)

Það er allavega þrusu gangur í gerjuninni núna.. Virðist ekki vera að skipta neinu máli þó þetta sé súrt. Tek gravity mælingu í kvöld eða á morgun. US05 er allavega að fíla þetta eins og er.

Þetta ilmar allavega þrusuvel. Ég hugsa að þetta geti vel verið drekkanlegt... Ekki verra að skella þessu á kút og carba. Spurning hvort maður vilji blanda þetta í sprite eða jafnvel gera 5% útgáfu sem er aðeins drykkjarvænni.

Jæja, búinn að henda þessu á kút og bragða. Ég henti þessu í gerjunarkistuna mína fyrir 1-2 vikum og setti í 1 gráðu í von um að fá þetta aðeins tærara. Það hófst, en ekki alveg tært samt. En bragðgott er þetta! Framar björtustu vonum. FG var 1.002, þannig að þetta er passlega sætt, ef svo má kalla. Er í raun ekkert sætt heldur ekki þurrt. Fínt jafnvægi hugsa ég bara, án þess þó að hafa smakkað sætari eða þurrari útgáfu af skeeter pee.

Mæli klárlega með þessu fyrir forvitna.

Hi Hrafnkell,
Thank you for bringing the skeeter pee to light in the forum (I had no idea this thing existed ). Now, I have made two batches and my motivation was reading your post (and nice pictures..).
Here is my story:
Some weeks ago, I went to Kostur looking for the lemon juice and I did not find the 1.4 liter (48 oz) bottle you refer to, instead they had smaller bottles with a reasonable price each but extremely expensive when scaling up (I think it was around 7 000 isk per liter) I was looking for 2.5 liters of Lemon juice so I refused to pay 2.5 x 7 000 isk for the juice ( for less money I can buy grape juice to make a pretty good wine, for example.. ) so I just run away from Kostur to end up in Bonus :-).
There things were looking much better, I found 500 ml bottles of sitronu safi very cheap (I don't exactly remember the price but extremely cheaper) so I moved on with the skeeter pee:

When looking at the ingredients [in the juice bottle] you will see E330 which means citric acid and E224 which means Potassium Metabisulfite. No problem at all with the first one and the second one is usually added in wine making so this time we dont added because is already there and it is also important to let the must rest for 24-48 hours before adding the yeast so the excess of Potassium Metabisulfite dissipate.
I rack it from an open bucket to the carboy with airlock 4 days ago and SG = 1.030. Now I just wait for fermentation to finish.

Since I like better the taste of lime(green) vs lemon(yellow) I also bought some Lime juice and made a second batch.

At this point I dont know how it will turn out in terms of flavors, aroma, etc, but I'll try to post back once I taste it..

Hey hrafnkell do you still have some? would be nice to interchange some bottles so we can taste them side by side.. :-)

I can definitely give you a taste at least. I kegged my batch a while ago, and just recently carbonated it and connected to tap. I tried to bottle it from keg, but the co2 escaped quickly so that didn't quite work out as planned. It's still sitting in the keg, which is getting progressively lighter every week.

I did not use any metabisulfite and the acid I just got from the lemon juice to invert the sugar. Fermentation was pretty painless and I think I let it sit in the primary fermenter for about 2 months before kegging.
Drinking this cold and carbonated is pretty nice. It's refreshing, not mouth puckering-ly sour and works much better than one might think when considering how much lemon juice went into this :)

I assume you used food coloring to get the red color?


I'll be making another, larger batch of this soon, to have ready this summer. I'm guessing this will be quite popular in the intense summer heat of Iceland :massi:

Nice to hear that you managed a 'painless' fermentation and it all went well.
I dont think I will carbonate mine (maybe for future batches if this one turns out to be good). I'll let you know when my skeeter pee is bottled.

Regarding the color, in the picture it looks like red but it is more like a light pink color.. I followed the link in your post and did stick to the original recipe (as much as possible) so I used the yeast slurry from a batch of krækiber wine I was doing, therefore the color. I am expecting some combination of flavors too lets see..

Some weeks ago I bottled my skeeter pee. Overall the drink is good: is clear and has very nice flavor. I like it and my friends like it as well. However is in the sour side so next time I'll try to use less juice/more water to bring the pH up a bit.
The one made out of lime is my favorite! :-)

Hello Mano.
I was wondering how has your skeeter pee progressed over time as you made it as a wine ?
Also do you guys think it would be a bad idea to use a yeast slurry from a port wine :D ?

Færð örugglega smit á bragð frá púrtvíninu. Og gerið væntanlega ansi þreytt eftir 20% gerjun á því. Ég myndi frekar nota annan slurry - Ger á nógu erfitt með sítrónusafann fyrir.

Já , var að leggja í púrtara og sá svo þetta en held að það sé ekki góð blanda , en það er mjög spennandi eins og Mano gerði þetta :)

Hey eddi849,

I just saw your question! More than 4 years later jejeje...
I still have some skeeter pee :-) A few weeks ago I opened and drank a bottle. It taste good! There were no signs of oxidation which in my opinion is the mayor enemy of aged homemade wine. I used a wine bottle with aluminium screw cap (not cork).
