House flavour...

So, Siggi, would you use this "yeast"?

There's a nice layer of actual yeast underneath, but here's my house gremlins brewing up some flavour for you. I'm brewing right now, and pulled this out to use it, but... I'm not sure...

Well, this certainly is VERY interesting to look at..!! ;)

What's the smell of it like?

Anyway, I'd use this if you want to make a beer with the house flavor .. alternatively, you can crop the house yeast and culture it on its own :)

Smells very sour, but not in a bad way :)

I'm not going to use it, but I tell you what, I've put it back in the fridge. If you like, I can bring it down on Menningarnótt, you can have it for yourself :)

So, I thought I should maybe try a sour ale, and put this to some use... What do you think of the following:

2kg pale
2kg wheat
200g special B
30g Bramling Cross for 60min.

Pitch the S04/wild blend, and leave it for 6 weeks.
Pop the top, and if appropriately sour, keg, or leave it another couple of weeks.
Start tasting the keg after 3-4 months?

Should I try and sour mash the grains first?

Þetta gæti orðið mjög áhugavert.

Ef þessi krukka er mjög súr - þá þarf kanski enga súrmeskingu.

perhaps you are lucky with your gremlins -- but mine taste like sauerkraut.

already tried one sauerkraut beer. been there done it, never ever doing it again.

NB: i love sauerkraut and make my own. but there is time and place for sauerkraut and the place is not in a beer glass :)

I'm brewing this tomorrow (tuesday) night, if anyone wants to stop by. I normally start around 6:30 pm or so, takes most of the night. Hverfisgata 104c, give me a call on 822 2595 if you get lost.
