There's a nice layer of actual yeast underneath, but here's my house gremlins brewing up some flavour for you. I'm brewing right now, and pulled this out to use it, but... I'm not sure...

Any suggestions
on tap: Nothing! new beer fridge in planning

I'm not going to use it, but I tell you what, I've put it back in the fridge. If you like, I can bring it down on Menningarnótt, you can have it for yourself

So, I thought I should maybe try a sour ale, and put this to some use... What do you think of the following:
2kg pale
2kg wheat
200g special B
30g Bramling Cross for 60min.
Pitch the S04/wild blend, and leave it for 6 weeks.
Pop the top, and if appropriately sour, keg, or leave it another couple of weeks.
Start tasting the keg after 3-4 months?
Should I try and sour mash the grains first?
